🐍 Low Carb Panna Cotta Recipe
Ingredients (makes 4 servings) 2 cups heavy whipping cream or coconut milk (480 ml/ 16 fl oz); 2 tbsp Erythritol or Swerve (20 g/ 0.7 oz), or to taste; 1 cup fresh raspberries (123 g/ 4.3 oz)
Place a saucepan over medium heat and add the cream, sweetener and vanilla. Bring to a simmer then remove from the heat. Whisk in the gelatin, until completely dissolved. If your gelatin is not dissolving, place back over the heat and bring to a simmer, but don’t allow the mixture to boil.
Meanwhile, in a small bowl, sprinkle 3/4 teaspoon of the gelatin over 1/4 cup of the orange juice and let stand until the gelatin softens, about 10 minutes.
